The Wild Thistle (Cynara Cardunculus Sylvestris), called “artichoke of Etna” or “cacucciuleddu spinusu catanisi” is a plant belonging to the Asteraceae family and grows spontaneously in the hilly areas around the volcano Etna. Famous for its extraordinary virtues: rich in antioxidants, balancing substances for the intestinal bacterial flora and natural purifying components.
Appreciated since ancient times and present in the tables of the populations of Southern Italy for over half of the last century, the wild thistle over the years has become a delicious rarity in Mediterranean cuisine.
